I can’t believe how good this Italian Casserole is! There’s a ton of meat in here, I used grass fed ground chuck and sweet Italian sausages… 4 lbs of meat. Oh and I loved the red wine vinegar and tomato sauce but once cooked, I could barely taste it!
Gluten free gnocchi… Not bad at all! Meat sauce courtesy of link below. Although, I cooked the ground beef and rest of the sauce on the stove. Halved the recipe and put only a few table spoons of wine. Skipped the mushrooms since I didn’t have any. I was a bit skeptical about the gnocchi but I’m happy to report they are pretty good. Not cheap but if you need to eat gluten free, great option!
It’s been a while since I cooked but glad I stumbled on this recipe today. I had a butternut squash to use up and this recipe was prefect. Loved the hazelnut flavor, although, I may have put too much chai spices! Still good though and look forward to eating it for lunch tomorrow!
Dinner tonight: stir fried beef and spinach over kelp noodles. I didn’t have Sriracha so used Thai chili sauce, which I did have. Duane had it over rice and me over kelp noodles. Yum! (Although next time, I’ll cook the beef second to last or last. My top sirloin got over cooked…)
